Best.Cake.Ever.

A few weeks ago I had a MAJOR chocolate cake craving so I decided to whip up this AMAZING cake for Sunday dinner dessert at my parents house. And let me just tell you...it was the best.cake.EVER!!  And I wasn't the only one that thought so! Both Damian and Kellen decided that this might be the best cake that I have ever made for them...and then proceeded to request I make it for a variety of upcoming events ha! Trust me people!! Make this cake! I promise you will enjoy it!!

Chocolate Skor Cake
What you need:
1 box chocolate cake mix (and the ingredients to make it!)
1 can condensed milk
1 jar caramel/butterscotch topping
1 container cool whip
5-6 skor bars, chopped 

Make and bake the chocolate cake according to the package.
Let cool for about 5 minutes.
Using the end of a wooden spoon, poke holes in the cake all over.
While the cake is still warm, pour the condensed milk and caramel topping over the cake, making sure some gets into the holes on the cake.
Spread the cool whip over the cake evenly.
Sprinkle with skor bar pieces.
Refrigerate until ready to eat.
ENJOY!!!


Chopped Skor bar! You better sneak just a lil taste to make sure its good! ha! 
Using the end of a wooden spoon to poke holes all over the cake.
Condensed milk and caramel topping soaking in. YUM!
Top with cool whip and the skor pieces!

Perogy Casserole! YUM!

In my family we LOVE perogies! We are your typical Ukrainian family that would probably eat perogies 5 nights a week if we could!!This next recipe was actually found by my Dad in the 'What's Cooking' magazine and was a BIG hit at there house...so I decided we better try for dinner one night at our house. And let me just tell you...It was DELICIOUS!!! And better yet, it was SUPER easy to make!! It puts a great spin on just your regular plain perogies! ENJOY!

Perogy Casserole
What you need:
2 tsp oil
1 diced onion 
1 tub Philadelphia Herb and Garlic Cooking Creme
1/2 cup skim milk
16-20 frozen potato and cheddar cheese perogies 
2 cups chopped ham
1 cup frozen peas
1/2 cup marble cheese, grated 

Heat oven to 350'
Heat oil in large frying pan on medium heat.
Add onions and cook until tender. Remove from heat.
Add cooking creme and milk to onions. Mix well.
Layer perogies,ham, and then peas in a large glass baking dish.
Pour the milk/onion mixture over the perogies.
Top with shredded cheese.
Bake for 40 minutes.
ENJOY!

Goodbye 2013...Hello 2014!!

So here we are...2014!! 
That is just crazy!! I know it makes me sound like an 'old person' but WHERE DOES TIME GO?! Ha!
2014 is going to be a BIG year for us!! It is the year that our family of two becomes a family of three! It is the year that I will not be teaching! (Which is WONDERFUL and WEIRD at the same time...) It is a year that is going to be VERY exciting, yet holds many unknowns as well! 

But before we run on into 2014, I wanted to take a look back at 2013... because it was pretty darn AWESOME as well!

Our Highlights from 2013:

*In January I started this blog!! 
Life On Summerwood Blvd was born! It has been a wonderful adventure and I have thoroughly enjoyed keeping this 'online journal' of our life!

*In March we celebrated my parents 30th wedding anniversary. That's quite the milestone!!
We took them to Pampa to celebrate!

*Also in March we took our yearly Spring Break trip to Las Vegas! It was a much needed break and something we always look forward to!!

*In May we took part in the 2013 MS Walk to support my Aunty Kathie who has battled MS for way to many years! It was a great day, and I was so proud that our family took part!

*In June I wrapped up another successful year in grade one and VERY unfortunately I had to leave my wonderful school! These kids were SUPER amazing!!

*In July we celebrated our First Wedding Anniversary! It was such an amazing first year! We celebrated with our trip to New York for a week! It was one of the most incredible weeks EVER!!

*In August we took a trip to Radium with my family to celebrate my Dad's 60th birthday! We rented a great cabin and enjoyed a week of relaxation!!

*In September we celebrated my 28th birthday! Man we are getting old!! My wonderful husband was in charge of picking up a birthday cake for me...and he came home with a Transformers cake from Dairy Queen!! HA! What a guy!!

We also found out we were expecting in September!! 'Peanut' will be joining our family in May 2014!!

*In October we hosted Thanksgiving dinner for both our families and I cooked a turkey for the first time in my life!! With the assistance of my Mom of course!! Ha!

And it was at our Thanksgiving dinner that we shared our exciting baby news with our parents! (We had told Kellen and Cody earlier that week!) We made it through the dinner portion and then prepared to serve pumpkin pie and tea/coffee. We served the pie and then we served their tea and coffee in these mugs...

And it only took them a few seconds to read their mugs and figure out what was going on! And then the mayhem began...ha! Needless to say, they were beyond SHOCKED and THRILLED!

*In November we headed to Alaska to visit Cody at university for the very last time! We had a great 'last' parents/family weekend with all of the Alaska fans and families!!

We also celebrated Damian's 28th birthday!

*In December we celebrated the holiday season ALL month long with our friends and family! It was a WONDERFUL time!!

And that was 2013!! What a wonderful year we had!!

My New Years Resolution this year is to take one picture every single day in 2014! My friends have been bugging me for almost a year now to get Instagram...so in the summer I signed up...and then never logged in again lol. BUT I have recently logged in and set myself up to use it! So every day this year I will be taking some sort of picture! I think it will be a great thing to look back on and see what 2014 looked like for us in pictures! And apparently when the year is through I can turn it into a book! Which would also be great!
